Why air fryers cook faster and hotter
An air fryer is effectively a small convection oven: a heating coil plus a high-speed fan that blasts hot air around the food. That strong airflow removes moisture from the surface and transfers heat quickly, so food crisps in 20% less time and at a noticeably lower set temperature. Convection (fan) oven recipes already account for a ~20°C drop — but because an air fryer's basket is far smaller and the airflow more concentrated, drop a further ~14°C compared to a regular oven recipe.
