⏱️ How does cooking time scale?
Cooking time rarely scales linearly with serving count. Volumetric dishes (curries, dals, rice) need only slightly longer; geometric foods (cakes, casseroles) take much longer as surface area vs volume changes.
- Curries, dals, soups: scale time ≈ 1.1–1.3× — shallow increments; simmer to taste.
- Rice, pasta, grains: keep time roughly the same; water absorbs at a similar rate.
- Cakes & roasts: use the "rule of +15–25% per doubling" — a 2× recipe may need ~25–35% more time, 4× needs ~45–60% more.
- Ovens: bake at the recipe's temperature; do NOT raise heat to bake faster (outside burns, inside stays raw).
- Always verify: taste, probe, or toothpick-test before pulling — the recipe's stated time is a starting point, not a guarantee.
